「一子相伝」料理と心 なかむら。京料理「なかむら」の歴史は文化文政の頃、ぐじやさば、かれいなどの若狭ものを所謂「鯖街道」を通じて資源に恵まれぬ京都に運び、都の公郷衆に供することを生業とした初代若狭屋清兵衛にさかのぼります。最小限の食材で最大限の味を引き出す。それこそが、わたくしどもの目指す料理でございます。
